What Your Hokkien Food Is Actually Called (and Why)
Half the Singapore hawker centre is named in Hokkien — you just order it so fast you never stop to think what the words mean. "Meat bone tea." "Stir-fried ricecake strips." "Thin flatbread." Once you know the literal meanings, the menu reads like a little map of where the food came from.
A note on spelling: Hokkien is mostly a spoken language, so these dish names are romanised by ear and spellings vary from stall to stall. We've given the common Singapore spelling, the Chinese characters, and the literal meaning.
The noodle dishes

Bak kut teh — the "meat bone tea" that has no tea
The name bak kut teh (肉骨茶) translates literally as meat (bak) + bone (kut) + tea (teh) — a peppery or herbal pork-rib soup that, confusingly, contains no tea at all.
So why "tea"? One widely told story is that the Klang-style dish was popularised by a man named Lee Boon Teh, and the "teh" honours his name — which happens to sound like the Hokkien word for tea. The Teochew-style peppery version most associated with Singapore was sold along the Singapore River — around Clarke Quay and River Valley — after the Second World War.
The Hokkien word bak (肉, meat) shows up all over the hawker centre — bak chor mee (minced-meat noodles), bak chang (meat dumpling), bak kwa (dried meat). Learn one word and you've half-decoded five dishes.

Even the coffee shop itself is half-Hokkien, half-Malay: kopitiam = kopi (coffee, from Malay) + tiam (店, shop, from Hokkien). The drinks menu is its own dialect:

Notice how many of these names are just plain descriptions — thin cake, black coffee, oyster fry, Fujian noodles. That's Hokkien all over: blunt, practical, and named by the people who cooked it. Reading a menu suddenly becomes a mini history lesson.
